Ingredients

tbsp
olive oil
1
large onion
finely chopped
2
zucchini
cut into bite-sized chunks
3
garlic cloves
finely sliced
1
14 oz Great Northern Beans or any white bean of your choosing
drained and rinsed

fresh tomatoes
diced
1
tsp
paprika
1
tsp
dried oregano
1
tsp
sea salt
1
tsp
black pepper
herbed basting oil
crusty bread
to serve

Instructions
1. Heat the oil in frying pan, over medium heat.
2. Add the onion, cook over medium heat for 3-5 minutes.
3. Add the zucchini and cook for another 5 minutes, stirring frequently.
4. Add the garlic and beans, cook for 1 minute.
5. Stir in the tomatoes, paprika, and oregano.
6. Cook for 10 minutes, stirring occasionally, then season with salt and pepper.
7. Drizzle with basting oil, if desired, and serve with crusty bread (and maybe some grated parm).
