Tofu Stir-Fry a la General Tso
The Good General was known to like like the fermented bean chunks too.

container (13 oz?) Extra Firm Tofu, diced into 1/2-inch cubes

Olive Oil

Broccoli Florets chopped into bite-size pieces
cut in bite-size pieces

Orange or Red Bell Pepper cored, seeded, 1/2-inch dice (about 1/2 cup)

peeled and minced Garlic

Tbsp
peeled and minced Ginger

trimmed minced green onion whites and the green parts thinly sliced for garnish

sauce in the style of General Tso

Instructions
Let's blanche, babies!
Add tofu to large pot boiling water; blanch 2 min. Drain; set aside.
Return water to boil; add broccoli. Blanch 2 min. Drain; set aside.
Heat a (preferably) stir-fry pan on medium heat.
Add oil and red peppers. Cook, stirring, 2 min.
Add that garlic, ginger, minced green onion whites, and red pepper flakes; cook, stirring, about 1 min until soft but not browned.
Add tofu and stir it all up.
While increasing heat to high, add the Good General's sauce. Cook, stirring, about 1 min until tofu is glazed.
Add zee broccoli and cook, stirring, 30 sec.
Plop it into a bowl and garnish with thinly sliced green onions and sesame seeds.
