What You’re Gonna Need:
- 3 tbsp olive oil
- 1 large onion finely chopped
- 2 zucchini cut into bite-sized chunks
- 3 garlic cloves finely sliced
- 1 14 oz Great Northern Beans or any white bean of your choosing drained and rinsed
- 3 fresh tomatoes diced
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp sea salt
- 1 tsp black pepper
- herbed basting oil
- crusty bread to serve

What Ya Gotta Do:
- 1. Heat the oil in frying pan, over medium heat.
- 2. Add the onion, cook over medium heat for 3-5 minutes.
- 3. Add the zucchini and cook for another 5 minutes, stirring frequently.
- 4. Add the garlic and beans, cook for 1 minute.
- 5. Stir in the tomatoes, paprika, and oregano.
- 6. Cook for 10 minutes, stirring occasionally, then season with salt and pepper.
- 7. Drizzle with basting oil, if desired, and serve with crusty bread (and maybe some grated parm).
